Spinach and Feta Chicken Rolls

Tender chicken breasts filled with a savory mix of sautéed spinach, onion, garlic, and creamy feta cheese, then rolled and baked to golden perfection. This dish is elegant enough for guests but easy enough for a weeknight dinner.

Ingredients
4 boneless, skinless chicken breasts

1 tablespoon olive oil

1 onion, finely chopped

2 cloves garlic, minced

5 ounces fresh spinach, chopped

1/2 cup crumbled feta cheese

Salt and black pepper, to taste

1/2 teaspoon dried oregano (optional)

Toothpicks or kitchen twine for securing rolls

Olive oil spray or extra oil for baking
