Spinach and Cheese Egg Bake

In a skillet or sauté pan, heat a small amount of olive oil or butter over medium heat.

Add the chopped onions and sauté for about 3-4 minutes, or until softened and translucent.

Add the spinach leaves to the pan and cook for another 2-3 minutes, stirring frequently, until wilted. Season with a pinch of salt and pepper.

Prepare the Eggs:

In a bowl, crack the eggs and whisk them until the yolks and whites are fully blended. Season with a pinch of salt and pepper.

Combine and Cook:

Preheat your oven to 375°F (190°C).

Once the spinach and onions are cooked, transfer them to a greased baking dish or oven-safe skillet.

Pour the beaten eggs over the spinach mixture, then sprinkle the shredded cheese evenly over the top.

Place the baking dish in the preheated oven and bake for 10-15 minutes, or until the eggs are set and the cheese is melted and bubbly.

Serve:

Once baked, remove from the oven and let cool for a few minutes before slicing. Serve warm as a wholesome breakfast, brunch, or light dinner.
