Spinach and Cheese Crustless Quiche

Preheat your oven to 350°F (175°C). Grease a pie dish or quiche pan with a bit of olive oil or cooking spray.

Cook the vegetables:
Heat 1 tablespoon of olive oil in a pan over medium heat. Add the finely chopped onion and sauté for about 5 minutes, or until softened.
Add the chopped spinach to the pan and cook for an additional 2 minutes, just until the spinach wilts. Remove from heat and set aside to cool slightly.

Prepare the egg mixture:
In a large bowl, whisk together the eggs, milk, garlic powder, salt, pepper, and ground nutmeg until fully combined.

Combine and assemble:
Stir the sautéed spinach and onion mixture into the egg mixture, followed by the shredded cheddar cheese. Make sure everything is evenly combined.

Bake:
Pour the egg mixture into the prepared dish and smooth it out evenly.
Bake for 30-35 minutes, or until the quiche is set in the center and slightly golden on top.

Serve:
Allow the quiche to cool for a few minutes before slicing and serving. It can be enjoyed warm or at room temperature.
