Spicy Stir-Fried Squid

Prepare the Squid: Clean and slice the squid into rings or bite-sized pieces. Pat them dry with paper towels to ensure they cook well.
Stir-Fry the Vegetables: Heat 1 tbsp of vegetable oil in a large pan or wok over medium-high heat. Add the garlic, onion, bell pepper, and red chilies. Stir-fry for 2-3 minutes, until the vegetables soften and the garlic becomes fragrant.
Cook the Squid: Add the remaining tablespoon of oil to the pan. Toss in the squid and cook for 2-3 minutes, stirring constantly, until the squid turns opaque and slightly browned. Be careful not to overcook it, as squid can become rubbery if cooked too long.
Add the Sauces: Stir in the soy sauce, oyster sauce, rice vinegar, and brown sugar. Toss everything together to coat the squid and vegetables with the sauce.
Add Spice and Flavor: If desired, sprinkle in the crushed red pepper flakes for an extra spicy kick. Stir in the grated ginger for an added layer of flavor.
Finish and Garnish: Once the sauce has thickened slightly and the squid is cooked through, drizzle with sesame oil (if using). Remove from heat. Garnish with chopped green onions and fresh cilantro.
Serve: Serve the stir-fried squid over steamed rice or noodles for a complete meal.
