Spicy Sausage Breakfast Burritos with Jalapeño Cheese

In a large skillet over medium heat, cook the sausage, breaking it up with a spoon, until fully browned and cooked through.

Remove from the pan and set aside, leaving some drippings in the pan for extra flavor.

2. Scramble the Eggs:

In a bowl, whisk together the eggs, milk, salt, and pepper.

Pour the egg mixture into the skillet and cook over low heat, gently stirring until soft and fluffy. Remove from heat.

3. Assemble the Burritos:

Warm the tortillas in a dry skillet or microwave to make them more flexible.

Layer each tortilla with:

A scoop of crispy hash browns

A portion of cooked sausage

Scrambled eggs

A handful of shredded jalapeño cheese

Optional toppings: chopped green onions, jalapeño slices, or cilantro

Fold in the sides of the tortilla, then roll tightly into a burrito.

For extra crispiness, toast the burritos in a skillet over medium heat for 1–2 minutes per side, until golden and the cheese melts.
