Spicy Maple Sriracha Cauliflower: A Sweet and Spicy Vegan Delight

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup.
Prepare the Cauliflower:

Cut the cauliflower into florets, making sure they’re roughly the same size for even cooking.
Make the Glaze:

In a small bowl, whisk together the maple syrup, sriracha sauce, soy sauce, garlic powder, smoked paprika, salt, and pepper until fully combined. Adjust the level of sriracha depending on how spicy you want the dish to be.
Coat the Cauliflower:

In a large mixing bowl, toss the cauliflower florets with olive oil to coat them evenly. Then, pour the maple sriracha glaze over the cauliflower and toss again until each piece is well coated.
Roast the Cauliflower:

Spread the cauliflower in a single layer on the prepared baking sheet. Roast for 25-30 minutes, flipping the cauliflower halfway through, until the edges are crispy and the florets are tender.
Garnish and Serve:

Once roasted, remove the cauliflower from the oven and transfer it to a serving dish. Garnish with chopped fresh cilantro or green onions, and sprinkle with sesame seeds if desired. Serve immediately while warm.
