Spicy Harissa Roasted Cauliflower Steaks: Bold, Flavorful, and Healthy

Start by removing the leaves and trimming the stem of the cauliflower. Slice the cauliflower into 1-inch thick “steaks.” You should get about 2-3 good steaks from the cauliflower, and the remaining florets can be broken off and roasted alongside the steaks.
2. Make the Harissa Marinade:

In a small bowl, mix together the harissa paste, olive oil, garlic powder, ground cumin, smoked paprika, salt, and pepper. Stir until the mixture is smooth and well combined.
3. Marinate the Cauliflower:

Place the cauliflower steaks on a large baking sheet. Brush both sides of the cauliflower steaks generously with the harissa marinade, making sure they are well coated. Let the cauliflower steaks marinate for at least 15 minutes, or if you have more time, refrigerate them for up to an hour to let the flavors meld.
4. Roast the Cauliflower Steaks:

Preheat the oven to 400°F (200°C). Once the cauliflower is marinated, roast it in the oven for 20-25 minutes, flipping halfway through, until the edges are crispy and golden, and the cauliflower is tender when pierced with a fork.
5. Serve and Garnish:

Once roasted, remove the cauliflower steaks from the oven and drizzle with a bit of fresh lemon juice. Garnish with chopped fresh parsley for a burst of color and added freshness.
6. Enjoy:

Serve the spicy harissa roasted cauliflower steaks as a main dish or a side dish alongside grains, salads, or other vegetable dishes. They pair wonderfully with couscous, quinoa, or rice.
