Spiced Roasted Carrots & Chickpeas with Whipped Feta

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

2️⃣ Prepare the Vegetables & Chickpeas:

Place the carrot sticks and chickpeas on the baking sheet.

Drizzle with olive oil, then sprinkle with smoked paprika, ground cumin, salt, and pepper. Toss everything together until well coated.

3️⃣ Roast the Carrots & Chickpeas:

Spread the carrots and chickpeas in an even layer on the baking sheet.

Roast for 25-30 minutes, tossing halfway through, until the carrots are tender and the chickpeas are slightly crispy.

4️⃣ Make the Whipped Feta:

In a food processor, combine crumbled feta, cream cheese, olive oil, and lemon juice.

Blend until smooth and creamy. Adjust with more olive oil or lemon juice if needed.

5️⃣ Serve:

Spoon the whipped feta onto a serving dish.

Top with the roasted carrots and chickpeas.

Garnish with fresh parsley, if desired.
