Ingredients
4 bone-in, skin-on chicken thighs (or whole chicken, cut into pieces)
½ cup soy sauce (light or regular)
¼ cup dark soy sauce (for color and depth)
¼ cup brown sugar
1 cup water
2 tablespoons Shaoxing wine (or dry sherry)
4 cloves garlic, minced
1-inch ginger, sliced
1 teaspoon five-spice powder
2 star anise
1 cinnamon stick
2 green onions, chopped (for garnish)
1 tablespoon sesame oil
How to Make
Prepare the sauce: In a large pot, combine soy sauce, dark soy sauce, brown sugar, water, Shaoxing wine, garlic, ginger, five-spice powder, star anise, and cinnamon stick. Bring to a boil.
Cook the chicken: Add the chicken to the pot, ensuring it is submerged in the sauce. Reduce the heat to low and simmer for 25-30 minutes, flipping halfway through, until the chicken is tender.
Glaze and rest: Remove the chicken from the pot and let it rest for 5 minutes. Simmer the sauce for another 5-10 minutes to thicken slightly.
Serve: Brush the chicken with sesame oil for a glossy finish. Garnish with green onions and serve over rice or noodles.
