Rub the olive oil over the chicken breasts, then evenly coat the chicken with the seasoning mixture.
3. Assemble the Dish
Place the seasoned chicken breasts in the prepared baking dish.
Evenly distribute the black beans, corn, and diced tomatoes around and over the chicken.
4. Bake
Cover the baking dish with foil and bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
5. Add Cheese & Finish Baking
Remove the foil and sprinkle the shredded Mexican cheese blend over the chicken. Return to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
6. Garnish & Serve
Sprinkle the dish with chopped cilantro (if desired) and serve with sour cream or avocado slices.
