Start by cooking the bacon in a cast iron skillet over medium heat until crispy. Once done, remove the bacon and set it aside, leaving the bacon grease in the skillet.
Prepare the Gravy Base:
Pour off all but enough bacon grease to cover the bottom of the skillet (about 1-2 tablespoons). Lower the heat to medium-low.
Add Flour and Stir:
Sprinkle 3-4 tablespoons of self-rising flour on top of the bacon grease and stir continuously. Keep stirring until the flour turns a light brown color. This is the roux, and it gives the gravy its thickness and flavor.
Add Water:
Slowly pour in 1/2 cup of water (or milk for a creamier version) and stir like crazy to ensure it’s well combined. Continue stirring to avoid lumps.
Add Tomatoes and Season:
Once the gravy mixture is smooth, add the can of diced tomatoes, along with salt and pepper to taste. Stir until everything is well incorporated.
Simmer and Serve:
Turn off the heat and let the gravy sit for a moment to thicken. Spoon generously over your favorite dishes like biscuits, toast, rice, or potatoes.
