Preheat your oven to 400°F (200°C).
Pierce the sweet potatoes several times with a fork and place them on a baking sheet. Roast in the oven for about 45-50 minutes, or until tender when pierced with a fork.
Once the sweet potatoes are cool enough to handle, peel the skin off and mash the flesh until smooth. Measure out 2 cups of mashed sweet potatoes and set aside.
Step 2: Prepare the Pie Filling
In a large mixing bowl, combine the mashed sweet potatoes, granulated sugar, brown sugar, evaporated milk, eggs, melted butter, vanilla extract, cinnamon, nutmeg, ginger (if using), and salt.
Use a hand mixer or whisk to beat the mixture until smooth and well combined.
Step 3: Assemble the Pie
Pour the sweet potato filling into the prepared pie crust. Use a spatula to spread it evenly, smoothing the top.
Tap the pie dish on the counter a few times to release any air bubbles and ensure the filling is evenly distributed.
Step 4: Bake the Pie
Place the pie in the preheated oven and bake at 350°F (175°C) for 45-50 minutes, or until the filling is set and a knife inserted in the center comes out clean. The pie should be golden brown on top and slightly puffed around the edges.
Step 5: Cool and Serve
Remove the pie from the oven and allow it to cool on a wire rack for at least 2 hours to set properly.
Once cooled, slice and serve with a dollop of whipped cream or a scoop of vanilla ice cream for extra indulgence.
