Soft Kefir Cookies

In a large bowl, whisk together the egg, a pinch of salt, and 1 tablespoon of sugar. Add vegetable oil and kefir, and stir until smooth.

Combine with Flour:
Gradually sift in the flour and mix it into the wet ingredients to form a soft dough. If the dough feels too sticky, add a little more flour until it’s manageable.

Form the Cookies:
Preheat your oven to 180°C (350°F). Roll the dough into small balls (about 1-inch in diameter) and place them on a baking sheet lined with parchment paper. Gently flatten each ball with the back of a spoon.

Top with Sugar:
Sprinkle the top of each cookie with 2-3 tablespoons of sugar for a sweet finish.

Bake:
Bake in the preheated oven for 15-20 minutes or until the cookies are lightly golden around the edges.
