Smoky Grilled BBQ Chicken Salad with Avocado Ranch Dressing

In a bowl, coat the chicken breasts with barbecue sauce. Cover and let marinate for at least 30 minutes.
2. Grill the Chicken:
Heat a grill or grill pan over medium heat. Grill the chicken for 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C).
Let it rest for 5 minutes before slicing.
3. Make the Dressing:
In a blender, combine avocado, Greek yogurt, buttermilk, lime juice, garlic, dill, onion powder, salt, and pepper.
Blend until smooth. If needed, adjust the consistency with more buttermilk.
4. Assemble the Salad:
In a large bowl, layer romaine lettuce, cherry tomatoes, black beans, corn, red onion, and avocado.
Top with sliced BBQ chicken, shredded cheddar cheese, cilantro, and tortilla strips.
5. Drizzle & Serve:
Pour the avocado ranch dressing over the salad. Toss gently and enjoy!
