Smoked Sausage and Potato Bake: A Hearty One-Pan Comfort Meal

Preheat the oven to 400°F (200°C). Grease a large baking sheet or line it with parchment paper for easy cleanup.
In a large bowl, toss the diced potatoes with olive oil, garlic powder, paprika, onion powder, thyme, salt, and black pepper until evenly coated.
Spread the seasoned potatoes in a single layer on the prepared baking sheet. Bake for 25 minutes, stirring halfway through to ensure even cooking.
While the potatoes bake, heat a large skillet over medium heat and add the sliced smoked sausage. Cook the sausage for 5-7 minutes until it’s browned and slightly crispy around the edges. Set aside.
After 25 minutes, remove the potatoes from the oven and add the cooked sausage slices to the baking sheet. Toss the sausage and potatoes together.
Return the baking sheet to the oven and bake for an additional 15-20 minutes, or until the potatoes are fully tender and golden.
In the last few minutes of baking, sprinkle the shredded cheese over the sausage and potatoes. Bake for 3-5 more minutes, or until the cheese is melted and bubbly.
Once done, remove from the oven and garnish with chopped fresh parsley, if desired.
