Smoked Salmon & Scrambled Eggs with Avocado

In a bowl, whisk the eggs with salt and pepper until well combined.

Cook the Scrambled Eggs:

Melt butter in a pan over low heat. Once melted, pour in the whisked eggs and stir gently. Cook slowly, stirring occasionally, until soft curds form (about 2-3 minutes).

Add the Smoked Salmon:

Just before the eggs are fully set, fold in the smoked salmon pieces. Cook for an additional minute, then remove from heat.

Plate & Garnish:

Serve the scrambled eggs on a plate, with sliced avocado on the side. Sprinkle with fresh chives and extra black pepper for garnish.

Enjoy!

Pair with toasted bread for a more filling breakfast, or enjoy as a low-carb meal.
