In a small bowl, mix the mayonnaise, crumbled bacon, bacon grease, Dijon mustard, Worcestershire sauce, smoked paprika, garlic powder, black pepper, and lemon juice (if using).
Stir until smooth and well combined. Cover and refrigerate for at least 15 minutes to let the flavors meld.
Step 2: Prepare the Smash Burgers
Divide the ground beef into 4 equal portions (about 4 ounces each). Roll them into loose balls but don’t pack them tightly.
Season each ball with salt, pepper, garlic powder, and onion powder.
Heat a cast-iron skillet or griddle over high heat until it’s smoking hot.
Place a beef ball onto the hot skillet and immediately smash it down with a spatula (use parchment paper between the spatula and meat to prevent sticking). Smash until about ¼ inch thick.
Cook for about 1-2 minutes until the edges get crispy and brown. Flip and cook for another 30-60 seconds.
Place a slice of cheese on top of each patty and let it melt.
Step 3: Toast the Buns
Spread butter on the cut sides of the brioche buns.
Toast them in a dry skillet over medium heat until golden brown, about 1-2 minutes.
Step 4: Assemble the Burgers
Spread a generous layer of Baconnaise Sauce on both toasted bun halves.
Place a cheesy smash patty on the bottom bun (double up if you want extra meat!).
Add your favorite toppings like lettuce, tomato, pickles, or extra crispy bacon.
Top with the other bun and enjoy!
