Slow Cooker Quiche Boats: A Hearty Breakfast Delight

Grease the slow cooker with olive oil to prevent sticking.
Line the bottom of the slow cooker with mini tortillas, slightly overlapping to form a base for the quiche boats.
Step 2: Prepare the Quiche Filling
In a large bowl, whisk together the eggs, heavy cream, milk, and a pinch of salt and pepper until well combined.
Stir in the shredded cheese, cooked bacon (or sausage), spinach, diced onion, bell peppers, and mushrooms.
Step 3: Assemble the Quiche Boats
Pour the prepared quiche filling over the tortilla base in the slow cooker, spreading it evenly.
If you prefer extra cheese, sprinkle some additional cheese on top of the quiche filling.
Step 4: Cook
Cover the slow cooker and cook on low for about 2 to 3 hours, or until the quiche is set and the eggs are fully cooked through.
If using a larger slow cooker, you may need to adjust the time as cooking times can vary.
Step 5: Serve
Once cooked, remove the quiche boats from the slow cooker. Slice them into wedges and serve hot.
