Slow Cooker Garlic Butter Beef Bites & Potatoes

Prepare the Ingredients:

Rinse and halve or quarter the baby yellow potatoes, depending on their size.

Season the beef stew meat with salt and pepper.

Slice the butter into small pieces for easier melting in the slow cooker.

Layer the Ingredients in the Slow Cooker:

Place the seasoned beef stew meat at the bottom of the slow cooker.

Scatter the halved potatoes on top of the beef.

Sprinkle the minced garlic, dried thyme, and dried rosemary (if using) over the top.

Add the Butter:

Place the sliced butter evenly on top of the meat and potatoes.

Cook:

Cover and cook on low for 6-7 hours or on high for 3-4 hours, or until the beef is tender and the potatoes are cooked through.

Finish:

Once cooked, give everything a gentle stir to coat the beef and potatoes in the garlic butter sauce.

Taste and adjust the seasoning with additional salt and pepper if necessary.

Serve:

Garnish with fresh chopped parsley for a burst of color and extra flavor.

Serve hot, either on its own or with a side of your favorite greens or salad.
