Stir in honey, soy sauce, and Dijon mustard, letting it simmer for 1-2 minutes until slightly thickened.
Coat and Cook the Chicken:
Return the chicken breasts to the skillet, coating them in the sauce.
Cover and cook on low heat for 5-7 minutes, or until the internal temperature reaches 165°F (75°C).
Serve:
Remove from heat and let rest for a few minutes.
Garnish with chopped parsley and serve warm.
