Boil potatoes in salted water for about 5–7 minutes to soften slightly. Drain and set aside.
Crisp the Potatoes:
In a large skillet, heat 1 tbsp olive oil and 1 tbsp butter over medium-high heat. Add the potatoes and cook, stirring occasionally, until golden and crispy (about 8–10 minutes). Remove and set aside.
Season the Steak:
In a bowl, toss steak cubes with salt, pepper, paprika, and garlic powder.
Sear the Steak Bites:
In the same skillet, heat 2 tbsp olive oil over high heat. Add the steak in batches to avoid overcrowding. Sear on each side for about 1–2 minutes until nicely browned. Remove from skillet.
Make Garlic Butter Sauce:
Reduce heat to medium. Add 2 tbsp butter and minced garlic to the skillet. Sauté for about 30 seconds until fragrant.
Bring It All Together:
Return the steak and potatoes to the skillet and toss to coat in garlic butter. Let everything heat through for another minute or two.
Serve:
Garnish with fresh chopped parsley and serve hot!
