Rinse the dried apricots in hot water to soften them.
If you don’t have canned pumpkin, you can cook and puree fresh pumpkin to get the required amount.
Make the Mug Pie Batter:
In a blender or food processor, combine the pumpkin, apricots, and eggs. Blend until smooth.
Add the vegetable oil, cornmeal, wheat bran, baking powder, salt, stevia (or sweetener of your choice), and cinnamon. Blend again until everything is well combined.
