Simple & Healthy Oatmeal Veggie Fritters

Prepare the Vegetables: Grate the zucchini, carrot, and potato. After grating, use a clean kitchen towel or paper towel to squeeze out any excess moisture from the vegetables.

Mix the Ingredients: In a large mixing bowl, combine the grated zucchini, carrot, and potato with the eggs and oatmeal. Season with salt and pepper, then stir everything until well combined. The oatmeal will help hold the mixture together without using flour.

Form the Fritters: Heat a little olive oil in a frying pan over medium heat. Scoop spoonfuls of the vegetable mixture and form small patties with your hands or a spoon.

Cook the Fritters: Fry the patties in the heated oil for about 3-4 minutes on each side, or until golden brown and crispy. Be sure not to overcrowd the pan; cook in batches if necessary.

Serve: Once cooked, remove the fritters from the pan and place them on a paper towel to drain excess oil. Serve hot and enjoy these tasty, healthy fritters!
