In a medium pot, bring 4 cups of water to a boil. Add the rice and a pinch of salt. Reduce heat to low, cover, and simmer according to package instructions (about 15-20 minutes). Fluff with a fork before serving.
Marinate and Grill the Chicken:

Marinate Chicken: In a bowl, whisk together olive oil, lemon juice, minced garlic, salt, pepper, and paprika. Add the chicken breasts and coat well. Let marinate for at least 10 minutes.
Grill Chicken: Preheat a grill or grill pan over medium-high heat. Grill the chicken for about 6-7 minutes on each side, or until cooked through (internal temperature of 165°F/75°C). Remove from heat and let rest before slicing.
Cook the Veggies:

Steam Broccoli: In a steamer or pot, steam the broccoli florets for about 5-7 minutes until tender but still bright green.
Sauté Mixed Veggies: In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the mixed vegetables and sauté for about 5-6 minutes, seasoning with salt and pepper.
