Simple Grilled Chicken with Rice, Broccoli, and Mixed Veggies

In a medium pot, bring 4 cups of water to a boil. Add the rice and a pinch of salt. Reduce heat to low, cover, and simmer according to package instructions (about 15-20 minutes). Fluff with a fork before serving.
Marinate and Grill the Chicken:

Marinate Chicken: In a bowl, whisk together olive oil, lemon juice, minced garlic, salt, pepper, and paprika. Add the chicken breasts and coat well. Let marinate for at least 10 minutes.

Sauté Mixed Veggies: In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the mixed vegetables and sauté for about 5-6 minutes, seasoning with salt and pepper.
Serve:
Plate the dish by serving the grilled chicken alongside a generous scoop of rice, steamed broccoli, and sautéed mixed veggies.
