Simple Beef Mechado: A Tender, Savory Filipino Dish

In a large bowl, combine the beef chunks, soy sauce, lemon juice, and black pepper. Mix well and marinate for 1 hour to allow the flavors to infuse.
Sauté the Aromatics:

Heat cooking oil in a large pan over medium heat. Add the garlic and onion, sautéing until fragrant and softened.
Cook the Beef:

Add the marinated beef to the pan and sauté for about 1 minute, allowing it to brown slightly. Add the bay leaves and the marinade sauce. Stir and cover the pan. Cook for 20 minutes, stirring occasionally.
Simmer with Tomato Sauce:

After 20 minutes, add the tomato sauce and stir to combine. Pour in 2 cups of water, add the beef broth cube, and throw in the Thai chili (if using). Stir again and cover. Let the beef cook for 40 minutes to 1 hour, or until the beef is tender. Add more water if necessary to maintain a saucy consistency.
Add the Vegetables:

Once the beef is tender, add the carrots and potatoes. Cook until the vegetables are soft, which will take about 15-20 minutes.
Finish with Bell Pepper:

Finally, add the green bell pepper and cook for a few more minutes, just until the peppers are tender and the sauce has thickened to your liking.
