Simple Beef Mechado – A Filipino Comfort Dish

Heat oil in a pot over medium-high heat.
Add the beef chunks and sear until browned on all sides. Remove and set aside.
Step 2: Sauté the Aromatics
In the same pot, add onion and garlic, cooking until softened.
Stir in tomato paste, cooking for 1 minute to enhance the flavor.
Step 3: Simmer the Stew
Return the seared beef to the pot.
Add soy sauce, tomato sauce, beef broth, bay leaf, paprika, salt, and pepper.
Bring to a boil, then reduce heat to low. Cover and simmer for 1 to 1.5 hours or until the beef is tender.
Step 4: Add Vegetables
Add potatoes and carrots, cooking for 15 minutes until softened.
Stir in bell peppers and let simmer for another 5 minutes.
Step 5: Serve and Enjoy
Remove the bay leaf and adjust seasoning if needed.
Serve hot over steamed rice and enjoy!
