Simple and Delicious Chicken Fillet Recipe

Season the chicken fillets with 1 teaspoon of salt and ½ teaspoon of black pepper.

Prepare the Vegetables:

Cut the onions, tomatoes, and potatoes into chunks. Set aside.

Season the Vegetables:

In a large bowl, mix the vegetables with 1 teaspoon salt, ½ teaspoon pepper, curry powder, paprika, garlic powder, and dried thyme. Toss them well to coat.

Skewer the Chicken and Vegetables:

Thread the chicken fillets, onions, tomatoes, and potatoes onto the wooden skewers, alternating between the chicken and vegetables. Repeat until all ingredients are skewered.

Add the Bacon:

Scatter the smoked cooked bacon strips over the top of the skewers.

Wrap in Foil:

Place each skewer onto a piece of baking foil and drizzle with vegetable oil. Wrap the foil tightly around the skewers, ensuring they are completely sealed.

Bake:

Preheat the oven to 375°F (190°C). Place the foil-wrapped skewers on a baking sheet and bake for 35-40 minutes or until the chicken is fully cooked and the vegetables are tender.

Serve:

Once baked, carefully remove the skewers from the foil. Garnish with freshly chopped parsley before serving.
