Preheat your oven to 400°F (200°C) or prepare your grill.
Cut the corn into 4 pieces each, chop the bell peppers and red onion, and mince the garlic.
In a small bowl, mix together the paprika, garlic powder, onion powder, dried thyme, salt, and pepper.
Assemble the Foil Packets:
Lay out 4 large pieces of aluminum foil, one for each serving.
Drizzle olive oil over each piece of foil, then sprinkle half of the seasoning mixture over each packet.
On each piece of foil, layer the shrimp, smoked sausage slices, bell peppers, onion, garlic, and corn pieces.
