Cook the Bacon: In a large skillet, cook the bacon over medium heat until crispy. Remove and set aside, leaving the bacon drippings in the skillet.
Cook the Shrimp: Add olive oil to the skillet with the bacon drippings. Add shrimp, garlic, and paprika, then cook for 2-3 minutes on each side until the shrimp turn pink.
Combine and Finish: Add lemon juice and cooked bacon to the shrimp, tossing everything together to combine.
Serve: Spoon the cooked grits onto plates. Top with the shrimp mixture and garnish with chopped green onions and fresh parsley.
