Scrambled Eggs with Spinach & Tomatoes

Heat olive oil (or butter) in a pan over medium heat.

Add turkey bacon (if using) and cook until crispy, about 3-4 minutes.

Stir in spinach and cherry tomatoes. Cook for 1-2 minutes until the spinach wilts and tomatoes soften.

Scramble the Eggs:

In a bowl, whisk the eggs with salt and pepper.

Pour the eggs into the pan with the veggies and gently stir until fully cooked (about 2-3 minutes).

Add Cheese & Seasonings:

Sprinkle feta cheese over the eggs and mix gently until the cheese begins to melt.

Add chili flakes for an optional spicy kick.

Plate & Serve:

Transfer the scrambled eggs to a plate and serve with a side of Greek yogurt for extra protein and creaminess.
