Savory Vegetable and Mozzarella Egg Bake

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a baking dish with a bit of vegetable oil or cooking spray.

Prepare the Wet Ingredients: In a large mixing bowl, whisk together the eggs, vegetable oil, milk, and a pinch of salt and pepper until well combined.

Make the Batter: In a separate bowl, sift the flour and baking powder together. Gradually fold the dry ingredients into the wet ingredients, mixing until smooth.

Add the Vegetables: Stir in the chopped leek, grated carrot, chopped sweet red pepper, grated potatoes, spinach, and chopped parsley. Mix well to combine.

Add the Cheese and Seasonings: Fold in the grated mozzarella cheese, and season with ground black pepper, salt, and dried oregano to taste. Stir until everything is evenly distributed.

Bake the Egg Bake: Pour the mixture into the prepared baking dish and smooth the top. Bake for 30-40 minutes, or until the egg bake is golden brown on top and firm to the touch.

Serve: Let the egg bake cool for a few minutes before slicing. Serve warm, garnished with extra fresh parsley if desired.
