Savory Vegetable and Cheese Egg Bake

Preheat the oven to 350°F (175°C).
Grease a 9×9-inch baking dish (or 8×8-inch dish) with cooking spray or olive oil.
Step 2: Sauté the Vegetables

Heat the olive oil over medium heat in a large skillet.
Add the diced onion, minced garlic, bell peppers, zucchini, and spinach. Cook for about 5-7 minutes, stirring occasionally, until the vegetables are softened.
Remove from heat and set the mixture aside to cool slightly.
Step 3: Mix the Egg Base

In a large mixing bowl, whisk together the eggs, milk, dried oregano, salt, and pepper.
Add the sautéed vegetable mixture into the egg mixture. Stir well to combine.
Fold in the shredded cheddar cheese.
Step 4: Bake the Egg Mixture

Pour the egg and vegetable mixture into the prepared baking dish and spread evenly.
Bake for 25-30 minutes, or until the egg bake is set and lightly golden on top.
Step 5: Serve

Let the egg bake cool for a few minutes before slicing.
Serve warm for a hearty breakfast or brunch.
