Sauté aromatics: Heat the olive oil or butter in a skillet over medium heat. Add the chopped onion and cook until soft and translucent, about 4–5 minutes.
Add garlic: Stir in the minced garlic and cook for another 30 seconds until fragrant.
Cook spinach: Add the spinach to the skillet and toss to coat in the oil and aromatics. Pour in the chicken broth.
Simmer: Let the spinach simmer in the broth for about 3–4 minutes, stirring occasionally, until wilted and the broth is mostly reduced.
Season: Add salt, pepper, and optional red pepper flakes to taste. Serve warm, optionally topped with a sprinkle of Parmesan cheese.
