Savory Sausage Fritters with Melty Cheese Topping

In a large bowl, combine the ground sausage, flour, cornmeal, baking powder, salt, pepper, and garlic powder. Stir to combine.
In a separate bowl, whisk together the milk and eggs until well blended. Add this mixture to the sausage mixture and stir until everything is combined.
Stir in the shredded cheddar cheese, making sure it’s evenly distributed throughout the batter.
Heat about 1 inch of oil in a large skillet over medium heat.
Using a spoon, scoop small portions of the batter and carefully drop them into the hot oil. Fry the fritters for 3-4 minutes on each side, or until they are golden brown and cooked through.
Once the fritters are cooked, remove them from the oil and place them on a paper towel-lined plate to drain any excess oil.
While the fritters are still warm, sprinkle the shredded cheese on top and let it melt. Optionally, garnish with chopped green onions or parsley for a pop of color.
