Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the onion and sauté for about 2-3 minutes until softened.
Add the ground beef to the skillet. Cook, breaking it apart with a spatula, until browned and fully cooked, about 6-8 minutes.
Stir in the red, green, and yellow bell peppers. Cook for an additional 3-4 minutes until the peppers begin to soften.
Season with garlic powder, paprika, cumin (if using), salt, and pepper. Mix well and cook for another minute.
Remove from heat and let the filling cool slightly. Stir in the shredded cheese until well combined.
Step 2: Assemble the Puff Pastry Ring
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
Roll out the puff pastry sheets on a lightly floured surface. If needed, gently press them together to form one large sheet.
Spoon the beef and veggie mixture onto the center of the puff pastry, leaving about 2 inches around the edges.
Cut the pastry into strips around the filling, then fold the strips over the mixture to form a ring, overlapping slightly as you go around. Tuck the edges in to seal the filling inside.
Step 3: Bake the Pastry Ring
Beat the egg and brush it over the puff pastry to create a golden egg wash.
Place the filled pastry ring on the prepared baking sheet and bake for 25-30 minutes, or until the pastry is golden brown and puffed.
Once done, remove from the oven and let cool for a few minutes before slicing.
