Savory Pancakes with Cheese, Vegetables, and Yogurt Sauce

In a large bowl, whisk together the eggs, salt, sugar, and yeast. Gradually add the milk, followed by the boiling water, and continue whisking until the mixture is smooth. Slowly add the flour and stir until a thick, smooth batter forms. Set aside for about 15 minutes to let the yeast activate.

2️⃣ Cook the Pancakes:
Heat a skillet or griddle over medium heat and add a little olive oil. Once hot, ladle a small amount of batter into the pan, swirling it to form a thin, even pancake. Sprinkle a small amount of shredded cheese and chopped vegetables onto the batter. Cook for about 2-3 minutes on each side, flipping once the edges start to look set and golden. Repeat until all the pancakes are cooked.

While the pancakes are cooking, prepare the sauce by mixing the plain yogurt with a pinch of salt and pepper. If you like, add a little lemon juice or garlic to enhance the flavor. Stir to combine and set aside.

4️⃣ Assemble the Pancakes:
Once all the pancakes are cooked, stack them on a serving plate. Drizzle the yogurt sauce generously over the pancakes, then garnish with fresh herbs for a burst of flavor and color.
