Savory Meatball Boats with Mozzarella and Garlic Butter

In a large bowl, combine the ground beef, eggs, bread crumbs, 1/4 cup parsley, 3 cloves garlic, salt, and pepper. Mix until everything is well combined.

Shape the Meatballs:
Shape the ground beef mixture into golf ball-sized meatballs.

Brown the Meatballs:
Heat a cast iron pan or skillet with vegetable oil over medium-high heat. Cook the meatballs until browned on all sides, about 5-7 minutes. Transfer the meatballs to a plate and remove the pan from heat.

Prepare the Rolls:
Preheat your oven to 350°F (180°C). Place the soft rolls on a baking sheet. Use a knife to cut off the tops of the rolls and press the inside down to create a boat-like shape.

Garlic Butter for the Rolls:
In a small bowl, mix the melted butter, 3 cloves garlic, and 2 tablespoons of parsley. Brush the garlic butter generously onto the cut sides of the rolls.

Toast the Rolls:
Bake the rolls for 5 minutes, or until toasted and slightly golden.

Assemble the Meatball Boats:
Spoon marinara sauce into each toasted roll. Place two meatballs in each roll, top with mozzarella cheese, and bake for an additional 5 minutes, or until the cheese is melted and bubbly.

Finish and Serve:
Remove from the oven, and sprinkle freshly grated Parmesan cheese over the top. Serve immediately and enjoy your savory Meatball Boats!
