Savory Ham and Cheese Crêpes: A Deliciously Melty Treat

In a bowl, mix together flour, baking powder, and a pinch of salt.
In another bowl, whisk together eggs, milk, and olive oil (or melted butter).
Pour the wet ingredients into the dry ingredients and mix until smooth. Let the batter rest for 10 minutes.
2. Cook the Crêpes:
Heat a non-stick pan over medium heat and add a little butter or oil.
Pour a small ladle of batter into the pan, swirling it to spread evenly.
Cook for 1-2 minutes until bubbles form on the surface.
Place a slice of ham and sprinkle with grated cheese (and mozzarella, if desired) directly onto the cooking crêpe.
Cover with a little more batter to enclose the filling. Flip carefully and cook the other side for 2 minutes, until the cheese is melted.
3. Serve Hot:
Repeat with the remaining batter and filling.
Serve the crêpes hot with a side of green salad or steamed vegetables for a balanced meal.
