Savory Ground Turkey & Roasted Veggie Rice Bowl

Prepare the Roasted Veggies:
Preheat your oven to 400°F (200°C). Toss the zucchini, squash, bell peppers, and broccoli with olive oil, salt, and black pepper. Roast the veggies for 15-20 minutes until they are tender and slightly charred.

Cook the Ground Turkey:
Heat olive oil in a pan over medium heat. Add diced onions and mushrooms, and sauté for 3-4 minutes until softened. Add the ground turkey, breaking it apart with a spoon. Season with salt, black pepper, garlic powder, onion powder, and chili flakes (if using). Cook until the turkey is browned and fully cooked. Stir in the soy sauce and let it simmer for 2 minutes.

Assemble the Bowl:
In a bowl, place the cooked rice at the bottom. Top with the roasted veggies and the ground turkey mixture.

Serve & Enjoy:
Garnish with extra soy sauce or a drizzle of your favorite sauce for added flavor. Enjoy this nutritious and filling bowl!
