Savory Garlic Mushroom Chicken with Spinach: A Comforting Creamy Dish

Season the chicken breasts with salt and black pepper on both sides.
Heat the olive oil in a large skillet over medium-high heat.
Once hot, add the chicken breasts and cook for 6-7 minutes per side, or until golden brown and cooked through. Remove the chicken from the skillet and set it aside.
Step 2: Sauté the Mushrooms and Garlic
In the same skillet, melt the butter over medium heat.
Add the sliced mushrooms and sauté for 4-5 minutes, until they become tender and browned.
Add the minced garlic and cook for another 1 minute, until fragrant.
Step 3: Make the Garlic Sauce
Pour in the chicken broth, scraping up any browned bits from the bottom of the pan.
Stir in the heavy cream and dried thyme. Let the mixture simmer for 3-4 minutes, allowing the sauce to thicken slightly.
Step 4: Add the Spinach and Combine
Add the fresh spinach to the skillet and cook for 2-3 minutes, until wilted.
Return the cooked chicken breasts to the skillet and spoon some of the sauce over the top. Simmer for an additional 3-5 minutes, allowing the chicken to absorb the flavors of the sauce.
Step 5: Serve
Serve the chicken and creamy mushroom-spinach sauce over a bed of cooked pasta or rice.
Garnish with extra fresh thyme or grated Parmesan cheese, if desired.
