Savory Garlic Mushroom Chicken with Spinach

Season the chicken breasts with salt, pepper, and paprika on both sides.
Heat olive oil in a large skillet over medium-high heat.
Add the chicken and cook for 5-7 minutes per side, until golden brown and cooked through. Remove from the skillet and set aside.
Step 2: Sauté the Mushrooms and Garlic
In the same skillet, add butter and let it melt.
Add sliced mushrooms and cook for 4-5 minutes, stirring occasionally, until they are soft and lightly browned.
Stir in the minced garlic and red pepper flakes (if using). Sauté for another 30 seconds, until fragrant.
Step 3: Make the Creamy Sauce
Pour in the chicken broth and let it simmer for 2 minutes, scraping any bits from the bottom of the pan.
Add the heavy cream and Parmesan cheese, stirring until the sauce is smooth.
Mix in the Italian seasoning and adjust seasoning if needed.
Step 4: Add Spinach and Chicken
Stir in the baby spinach and cook for 1-2 minutes, until wilted.
Return the chicken to the skillet, coating it with the creamy mushroom sauce.
Let everything simmer for 2 minutes, then remove from heat.
Step 5: Serve
Serve warm over rice, mashed potatoes, or pasta. Garnish with extra Parmesan cheese if desired.
