Heat 1 tbsp olive oil in a large skillet or wok over medium-high heat.
Add the chicken pieces and season with salt and pepper. Cook for 5-7 minutes, stirring occasionally, until the chicken is browned and cooked through.
Remove the chicken from the skillet and set it aside.
Sauté the Veggies:
In the same skillet, add the remaining 1 tbsp olive oil.
Add the onion, garlic, broccoli, bell peppers, carrot, and snap peas. Sauté for about 5-7 minutes, or until the veggies are tender but still crisp.
Season with a pinch of salt and pepper.
