In a large bowl, combine the ground beef, breadcrumbs, Parmesan cheese, egg, garlic, thyme, salt, and black pepper. Mix until all ingredients are well combined.
Form the mixture into meatballs, about 1 inch in diameter, and place them on a baking sheet lined with parchment paper.
Bake the meatballs for 20 minutes or until they are cooked through.
Step 2: Caramelize the Onions
While the meatballs are baking, melt the butter and olive oil in a large skillet over medium heat.
Add the sliced onions and sugar to the skillet. Cook, stirring occasionally, until the onions are caramelized and golden brown, about 20 minutes.
Step 3: Make the Onion Sauce
Sprinkle the flour over the caramelized onions and stir to combine. Cook for another minute to remove the raw flour taste.
Gradually add the beef broth, stirring constantly, and bring the mixture to a simmer. Cook for about 5 minutes until the sauce thickens.
Step 4: Combine and Melt the Cheese
Once the meatballs are cooked, add them to the skillet with the onion sauce. Spoon the sauce over the meatballs to coat them.
Sprinkle the shredded Gruyère cheese on top of the meatballs and cover the skillet. Let the cheese melt, about 3-4 minutes.
Step 5: Serve
Garnish with freshly chopped parsley (if desired).
Serve the meatballs hot, either on their own or over rice, mashed potatoes, or crusty bread.
