Add Vegetables and Cheese: Fold in the crumbled feta cheese, chopped spinach, and chopped red bell pepper into the dry mixture. This ensures even distribution of the ingredients.
Mix Wet Ingredients: In a separate bowl, whisk the eggs, milk, and olive oil (or melted butter) until well combined.
Combine Wet and Dry Mixtures: Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix, as this can make the muffins dense.
Fill Muffin Tin: Spoon the batter into the muffin tin, filling each cup about ¾ full.
Bake: Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean and the muffins are golden brown on top.
Cool and Serve: Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely. Serve warm or at room temperature.
