In a small bowl, combine the warm milk, sugar, and yeast. Stir until the yeast dissolves and let it sit for about 5-10 minutes, or until it becomes frothy.
In a large mixing bowl, combine the flour and salt. Add the yeast mixture and melted butter. Stir until the dough comes together.
Knead the Dough:
Transfer the dough to a floured surface and knead for 8-10 minutes, or until the dough becomes smooth and elastic. You can also use a stand mixer with a dough hook for this step.
Let the Dough Rise:
Place the dough in a greased bowl and cover it with a clean kitchen towel or plastic wrap. Let it rise in a warm place for 1-1.5 hours, or until it doubles in size.
Prepare the Filling:
While the dough is rising, prepare your filling by slicing the pepperoni and shredding the cheese. Set aside.
Shape the Bread:
Once the dough has risen, punch it down to release the air. Roll the dough out on a floured surface into a rectangle about 1/2 inch thick.
Sprinkle half of the shredded mozzarella and cheddar cheese over the dough, then layer the pepperoni slices on top. Sprinkle the remaining cheese and optional oregano on top.
Roll and Form the Loaf:
Starting from one edge, carefully roll the dough into a log or cylinder shape, making sure the filling stays inside. Pinch the edges to seal the dough.
Bake:
Preheat your oven to 375°F (190°C). Place the rolled dough into a greased loaf pan or a baking sheet. Let it rise for another 20-30 minutes.
Once the dough has risen, bake for 30-35 minutes, or until the bread is golden brown and sounds hollow when tapped on the bottom.
Cool and Serve:
Allow the bread to cool for 10-15 minutes before slicing. Serve warm and enjoy the cheesy, pepperoni-filled goodness.
