Cook the Bacon: In a large skillet or frying pan, heat a bit of vegetable oil over medium heat. Add the chopped bacon and cook until crispy and golden brown. Once cooked, remove the bacon from the pan and set it aside, leaving the rendered fat in the skillet.
Sauté the Sausage: In the same skillet with the bacon fat, add the sausage slices. Cook until they’re browned and cooked through, about 5-7 minutes. Once done, remove and set aside with the bacon.
Cook the Vegetables: In the same pan, add a little more oil if necessary. Toss in the chopped onions, red onion, carrots, and bell peppers. Sauté for 5-7 minutes, or until they begin to soften.
Add Garlic and Cabbage: Add the minced garlic and cook for another minute. Then, add the shredded cabbage to the pan. Stir everything well, making sure the cabbage wilts down. Season with salt, black pepper, paprika, basil, nutmeg, garlic powder, and onion powder.
Combine Everything: Once the cabbage is tender, return the bacon and sausage to the pan. Add the soy sauce and give everything a good stir to combine and let the flavors meld together for another 3-5 minutes.
Prepare the Topping: In a small bowl, combine the chopped boiled eggs, mayonnaise, and sour cream. Mix until smooth.
Serve and Garnish: Serve the cabbage and sausage mixture in bowls, topped with the creamy boiled egg mixture. Enjoy your hearty and flavorful meal!
