Sausage, Egg, and Cheese Breakfast Roll-Ups

Cook the Sausage: Heat a large skillet over medium heat. Add the breakfast sausage and cook until browned and fully cooked, breaking it up into small crumbles as it cooks. Once done, remove from the skillet and set aside, leaving a little bit of the fat in the skillet.

Scramble the Eggs: In a bowl, whisk the eggs and milk together with a pinch of salt and pepper. Melt the butter in the same skillet over medium heat. Pour in the egg mixture and cook, stirring occasionally, until the eggs are just set and scrambled to your liking. Remove from the heat and set aside.

Assemble the Roll-Ups: Lay the tortillas flat on a clean surface. Evenly distribute the cooked sausage and scrambled eggs between the tortillas. Sprinkle shredded cheese over the top of the eggs and sausage.

Roll and Heat: Carefully roll up each tortilla tightly, folding in the sides as you go. Place the roll-ups seam-side down in the skillet (or in a clean pan) over medium heat. Cook for 1-2 minutes on each side until the tortillas are golden brown and the cheese has melted inside.

Serve: Slice the roll-ups in half or serve whole. Optionally, drizzle with hot sauce or serve with salsa on the side for an extra flavor boost.
