Sausage, Egg, and Cheese Breakfast Roll-Ups

Cook the breakfast sausage in a large skillet over medium heat until fully browned and crumbled, about 5-7 minutes. Drain any excess fat and set aside.
Step 2: Scramble the Eggs
In a bowl, whisk together the eggs, milk, salt, and pepper until well combined.
Heat 1 tablespoon of butter in a non-stick skillet over medium heat. Pour in the egg mixture and cook, stirring gently, until the eggs are scrambled and cooked through, about 3-4 minutes. Remove from heat.
Step 3: Assemble the Roll-Ups
Lay the flour tortillas flat on a clean surface.
Evenly divide the scrambled eggs, cooked sausage, and shredded cheddar cheese among the tortillas.
Roll up each tortilla tightly to enclose the filling.
Step 4: Cook the Roll-Ups
Heat the remaining 1 tablespoon of butter in a large skillet over medium heat.
Place the roll-ups seam-side down in the skillet and cook, turning occasionally, until golden brown and the cheese is melted, about 4-5 minutes.
