Sausage and Potato Casserole Recipe

Preheat your oven to 375°F (190°C).
In a large pot, boil the diced potatoes in salted water until just tender (about 8-10 minutes). Drain and set aside.
2. Cook the Sausage:
While the potatoes are cooking, heat 1 tbsp olive oil in a skillet over medium heat.
Add the sausage and cook, breaking it up into crumbles as it cooks, until browned and fully cooked through (about 6-8 minutes).
Remove from heat and set aside.
3. Prepare the Casserole Mix:
In a large mixing bowl, combine the cooked potatoes, sausage, chopped onion, and minced garlic.
Add the sour cream, milk, and shredded cheddar cheese. Stir until everything is well combined.
Season with paprika, garlic powder, onion powder, thyme, salt, and pepper to taste.
4. Assemble the Casserole:
Transfer the mixture to a greased 9×13-inch baking dish. Use a spatula to spread it evenly.
Sprinkle additional shredded cheese on top if desired for an extra cheesy crust.
5. Bake the Casserole:
Bake the casserole in the preheated oven for about 20-25 minutes, or until the top is golden and bubbly.
If you like a crispy top, broil for the last 2-3 minutes, keeping an eye on it so it doesn’t burn.
6. Serve and Garnish:
Remove from the oven and let the casserole sit for a few minutes before serving.
Garnish with freshly chopped parsley if desired.
