Add the Italian sausage, breaking it up with a spoon as it cooks. Brown the sausage for about 5-7 minutes until fully cooked through. Remove the sausage from the pot and set it aside.
Sauté Vegetables:
In the same pot, add the chopped onion and cook until softened, about 3-4 minutes.
Add the minced garlic and cook for another 1 minute, until fragrant.
Simmer the Stew:
Return the cooked sausage to the pot and add the chicken broth, chopped cabbage, sliced carrots, and diced potatoes.
Stir in the dried thyme, paprika, salt, and pepper.
Bring the mixture to a boil, then reduce the heat to low and simmer for 25-30 minutes, or until the vegetables are tender and the flavors have melded together.
Taste and Adjust:
Taste the stew and adjust the seasoning with more salt and pepper, if needed.
